It is a refinement to the iPhone system that we have known so far. Better here and there, especially in its lens optics; making it one of the best portable camera (and video camera) in the market.
But -- my guess -- it would be the iOS 5 + iCloud that will brings the biggest difference. It will let things to be done simpler, better; everything sync from one device to another; gives first "sense" of the beauty of massive storing capacity that cloud solution could provide; at the same time also provide a taste of "information portability".
Last but least: if in daily life it would be really become practical -- it probably would be a lot of fun to be able too to start being able to "talk" to our smartphone, tablets and computers, so they get things done. So that instead of typing on it, we could simply ask it to do stuff.
The "problem" is: while some people would be able to do it on the new iPhone 4S; most developers might need to consider how to do it for the older devices. Hence, for the time being: it might be an initial exciting future that has been revealed today; yet the one who's relevance and practicality need still to be seen. Such might be practical when someone is in the car, driving alone etc; such might be practical when they receive messages and notification in English; many useful cases in a group meeting, etc. Yet when someone is inside a public room, such might not always be appropriate. Can we imagine what would happen to the room, station, airplane, meeting room, etc, if everybody start "talking" to their smartphone, ipad, and computers? It would be pretty awkward.
All and all, the introduction of iPhone 4S once again brings in the new direction on the possible uses of smartphone devices, especially when it gets better optics, better OS and start connecting to the cloud. Such is a pretty fascinating ideas that iPhone 4S brought. Beyond that, while the "inside" part is improving significantly; the outer shell of the device is still -- for now -- look more or less the same.
We sincerely look forward for the next iteration of how the next iPhone 5 will look like. Not just the inside, but the "outside-look-and-feel" too.
